This beverage is half mulled cider, half mulled beer and 100% warm and delicious! Perfectly balanced with just the right combination of fall spices, finishing off with a subtle tone of earthiness and fruitiness.

Ingredients:

  • 1 cinnamon stick

  • 5 whole cloves

  • 1/2 nutmeg seed

  • 1 star anise

  • handful pomegranate seeds

  • 2 cups apple cider

  • 1/4 cup maple syrup

  • 3 cups spiced beer (~ 1.5 tallboys)

  • 1/4 cup dark spiced rum

  • 4-5 sprigs thyme (for garnish)

Directions:

1. In a large pot on the stove, toast the whole spices over medium heat until fragrant. 1-2 minutes.
2. Add the apple cider, pomegranate seeds and maple syrup. Give the cider mix a couple stirs before bringing it to a simmer for 15-20 minutes.
3. Add the spiced beer and stir the mixture. Keep on low-medium heat until the mixture has warmed sufficiently, no more than 5 minutes. Do not let it come to a boil (try to stay below ~80°C).
4. Remove the pot from the heat and add the spiced rum. Give the mixture a couple final stirs.
5. Fill mugs with the heated drinks, garnish with a sprig of thyme and enjoy!
